Veggie Popped Egg Bites

Makes a dozen | Prep time: 10 min | Cook time: 18-20 min

Ingredients

  • 2 Veggie Pop-Ins (Carrot, Broccoli, or Cauliflower)
  • 6 eggs 
  • ¼ cup milk 
  • ½ cup cheddar 
  • Salt and pepper

Directions

  1. Preheat oven to 350°F. 
  2. Whisk eggs and milk together. 
  3. Soften, squeeze, and stir in 2 Veggie Pop-Ins. 
  4. Stir until blended. 
  5. Stir in cheese, salt, and pepper. 
  6. Pour into muffin tin and bake 18–20 minutes.
